Since becoming gluten free we have searched to find great recipes that taste great with gluten free flour. Lilah is the baker in our family. She dreams of opening a etsy site where she can sell baking goods to order. I think there would be a market for a gluten free etsy site! (there may be some already......)
This recipe came from The Big Book of Baking: Your complete guide to perfect cakes and baked goods every time.
I made some adjustments to make it gluten free.
Double Chocolate Muffins
1/2 cup softened butter
3/4 cup fine sugar
1/2 cup dark brown sugar
2/3 cup sour cream
5 tbsp milk - we used skim
2 cups gluten free flour (we used King Arthur brand)
1 tsp baking soda
2 tbsp unsweetened cocoa
1/2 cup chocolate chips
preheat oven to 375 degrees.
Combine butter, sugar, brown sugar in a bowl and beat well. Beat in eggs, sour cream, and milk until thoroughly mixed. Mix the flour, baking soda, and cocoa in a separate bowl and stir into mixture. Add chocolate chips. Mix.
Spoon batter into paper muffin liners. The recipe calls for 12 but we got 14 muffins. Bake for 30 minutes. Cool and enjoy!
These muffins are more cake-like than “Muffiny”. They would make a nice dessert. We found them light and airy, mildly chocolate flavored and satisfying. I certainly could see Lilah baking and charging for these muffins!
